What is maple nut brittle?

Maple nut brittle is a recipe that I created completely by accident. Sometimes, the tastiest recipes are completely serendipitous. I was experimenting with mixed nuts and maple syrup with the idea of making a nutty cereal bar with as few ingredients as possible. Cereal bars wasn’t quite what I ended up with but my newly founded Maple Nut Brittle is a serious treat. If you’re looking for a perfectly uniform nutty snack, you may prefer to wait for my no bake nut bars coming next year. But if you’re okay with a crumbly home baked aesthetic then these are the right treat for you. I’m slightly lacking in finished photos of this recipe as I wasn’t sure if I was going to post it. Most of the photos are in bad light, on my lap, just before I gobbled them up!

Maple nut brittle, a healthy vegan snack and a great healthy snack idea for all. A great recipe for nuts if you have lots to use up! This recipe makes roughly 8 portions and is a great recipe for people with dietary restrictions such as:

Step 1: Mix your nuts

Preheat your oven to 160C. (It’s really important to bake on a low temperature else you will burn and ruin your nuts, and nuts ain’t cheap). Pour your nuts, seeds, rice cereal and maple into a bowl. Mix really well making sure every nut and seed is well coated in syrup.

Step 2: Form the maple nut brittle

Line a baking tray with baking paper and spread your nut mixture out. I found my baking tray was a bit too large for the quantity of nut mixture so i pushed them to one side to keep a bit of thickness. If you spread your nut mixture too thin then it won’t stick together at all. In hindsight i really wish I’d have used a spring form cake tin for this recipe. Grab another sheet of baking paper and lay it over the top of your nuts. Push down either with your hands or a flat surface to really push the nuts together and compact them so that they stick together well.

Step 3: Bake the maple nut brittle

Bake in the oven for 40 minutes before bringing out to cool, don’t try to touch or move them as they won’t solidify until cooled. Once cooled you can start breaking them into pieces. I originally tried to cut my brittle with a knife but all I achieved was breaking off the nuts that the knife touched. I would recommend breaking chunks off with your fingers and letting the brittle snap wherever it wants to snap.

Because of the lack of uniform portions it’s very hard to judge the calories in this recipe. However I worked out that if you were to cut this brittle into 8 equal pieces, each piece would have 220kcals.

Q: How do I prevent the chocolate from seizing during melting?

A: To avoid seizing, ensure that no water comes into contact with the chocolate during the melting process. Use a dry, clean double boiler or a heatproof bowl over simmering water to melt the cocoa butter.

Q: Can I store the chocolate at room temperature?

A: While it’s best to store the chocolate in the fridge to maintain its texture, you can keep it at room temperature for short periods. Just be cautious in warmer climates, as it may soften.

Ingredients

  • 1 ½ cups mixed nuts of your choice
  • ½ cup mixed seeds of your choice
  • cup puffed rice cereal organic
  • cup maple syrup

Instructions

  • Preheat oven to 160C

  • Mix all ingredients in a bowl and spread onto a lined baking tray.

  • Cover with baking paper and push the nuts into each other so they stick together better.

  • Bake the nuts for 40 minutes and leave to cool completely before breaking into chunks.

Notes

Store in an airtight container. Do not freeze
