When I first started living on my own, I used my slow cooker for everything and I still do. I love the fragrant smell of slow-cooked beef after a long day at work.

That’s usually where I find them in the grocery store. Of course, the aujus seasoning packet can be found in the general section where all the seasoning packets are on display.

This Mississippi Pot Roast with carrots simmers all day in the slow cooker. After 12 hours, the beef literally falls apart with just a fork.

I’ll admit, we love this roast so much that I usually start it the night before. Two hours before bedtime, I’ll start the roast on high then switch it to low before bed. It simmers away all night and finishes cooking by brunch. Sometimes, I’ll let the roast simmer even longer as we really love slow cooked meat.

We love to add the carrots in at the start of this roast because some of the seasonings get absorbed into the vegetables and it tastes just like heaven. I have heard of people that add the carrots at the end of slow cooking but I’ve tried this recipe both ways and I prefer to have all the ingredients added at once.

We like to serve this crock pot roast recipe with rice or mashed potatoes. We have also tried French Dip Sandwiches because this roast makes extra liquid that you’ll want to hold on to.

Ingredients

  • 4 pounds boneless beef rump roast
  • 2 teaspoons soy sauce
  • ¼ cup water
  • ¼ cup co*ke soda
  • 3 extra large beef bouillon cubes I used Knorr extra large. If using small cubes, use 4-5
  • ½ tablespoon parsley
  • 1 ounce packet Ranch Salad Dressing & Seasoning Mix
  • ¼ teaspoon ground black pepper
  • 1 ounce packet au jus gravy
  • 16 ounces baby carrots
  • 4-6 jarred pepperoncini peppers
  • ¼ cup butter

Instructions

  • Place roast in slow cooker.

    Add in water, co*ke, soy sauce, beef cubes and pepperoncini peppers.

    To the top of the roast, sprinkle ranch seasoning, aujus gravy, pepper, and parsley.

    Add baby carrots and butter.

    Set slow cooker on high 2 hours.

    After 2 hours, reduce to low; cook 10 hours.

    Carefully shred big pieces. Serve with rice or potatoes.
